Home Made Chicken Noodle Soup

There’s nothing like home made chicken noodle soup. It’s easy to make, the perfect comfort food, and indescribably delicious!

This recipe calls for pre-cooked chicken. You can use leftover chicken you may have from a meal or, better yet, use the chicken left from making your own chicken stock!

Ingredients:

2 cups of diced chicken – or more, if desired
2 quarts chicken stock
2 quarts water
2 carrots – chopped
1 onion – chopped
2 stalks celery – chopped
1 teaspoon basil
1 bay leaf
salt- to taste
pepper – to taste
4 – 6 cups Home Made Egg Noodles (made very thin) or packaged egg noodles

Directions:

Combine all ingredients EXCEPT noodles in a stock pot and bring to a boil. Reduce heat and simmer for about one hour, or until carrots are soft. Bring soup back to rolling boil, add egg noodles and cook until they are the desired consistency or, if using packaged egg noodles, cook for length of time specified in directions. (NOTE: If using home made egg noodles, the time required for cooking them may be between 15 minutes to 1 hour, depending on the thickness of the noodles).

This recipe makes about 6 servings.
